Making Clean Chocolate Chip Cookies
I have a craving for clean chocolate chip cookies all week, and as its half-term, I wanted to make a batch that we could all enjoy, including our gluten-intolerant tyrant of a daughter (it’s been a long week).
I often bake gluten-free cookies with almond flour, and so it isn’t much of a leap to realise that you can achieve the same sort of texture with almond butter. In fact, with almond butter its even easier, you simply need to beat in a stabiliser (I used egg) and some sweetener (I used maple syrup). I added some baking soda too to give the cookies a bit of rise.
These cookies were so easy to make. I beat all of the ingredients together using a wooden spoon until it formed a gorgeous, glossy dough. Doesn’t it look amazing!
I could have eaten it just like that. Luckily, I didn’t and I spooned it out onto baking trays lined with parchment paper, then baked for 10 minutes in a hot oven.
Honestly, these cookies took me 15 minutes to make, from start to finish! Cooking good food from scratch really doesn’t have to be time consuming.
We’re selling our house at the moment and so I’m going to make another batch of these just before our next house viewing, I don’t see how anyone could resist the amazing smell of these cookies. You’ll have to make them too, just to smell the gorgeousness for yourself!
