Banana & Coconut Chia Pudding
This clean chia seed pudding can be enjoyed as a nutritious dessert or even as a breakfast. Choose a ripe banana for extra sweetness.
Chia seeds are protein and carbohydrate rich, and contain omega-3 fatty acids. Chia seeds also contain minerals and vitamins necessary for good health, including calcium, manganese and magnesium. Chia seeds swell up when added to liquid and this property makes them perfect for adding to puddings.
- Puree the banana with the coconut milk until smooth (alternatively mash the banana and then stir in the coconut milk).
- Stir in the chia seeds and mix well until the seeds are dispersed throughout the banana mixture.
- Spoon the mix into 2 glasses allowing a little room for the seeds to swell.
- Leave the puddings to sit for 30 minutes, or cover with Clingfilm and refrigerate for up to 12 hours.
