Spicy Avocado Butter with Crunchy Melba Toast
Avocados are an excellent source of mono-unsaturated fats, antioxidants and vitamins. In this clean-eating recipe, crunchy and nutritious Melba toast slices are spread with a slightly spicy, dairy free avocado butter. Dairy-free recipe.
Make the Melba toast
- Toast the bread slices.
- Cut the crusts off the toast. Then with a bread knife, carefully cut through the soft bread centre of the toast, between the 2 toasted sides. This should leave you with 2 thin slices of bread, toasted on one side.
- Place the bread under the grill, untoasted side facing up towards the elements. Toast until the bread turns golden and the sides start to curl upwards. Remove and set to one side to cool and crisp up.
Make the avocado butter
- Place the avocado, lemon juice, chilli, garlic, coriander and salt in a food processor. Blend until nearly smooth.
- Serve the Melba toasts, spread with the avocado butter.
