Sweet & Sour Balsamic Braised Red Cabbage

In this clean eating red cabbage recipe, the ruby red cabbage is braised slowly with leeks and balsamic vinegar to create a glossy, vibrant and deliciously flavoured side-dish. This cabbage is beautiful paired with roasted red meats, or nut roasts.

Method

  1. Cook the sliced leeks gently in a large saucepan with the olive oil for 5 minutes.
  2. Add the balsamic vinegar and maple syrup to the leeks and stir to coat well.
  3. Add the red cabbage to the saucepan, and stir again to ensure all of the vegetables are coated in the vinegar.
  4. Cook on the hob, on a low heat, for 60 minutes. When the cabbage is glossy and tender, with a little bite left to it, it is ready to serve.
