Sweet & Sour Balsamic Braised Red Cabbage
In this clean eating red cabbage recipe, the ruby red cabbage is braised slowly with leeks and balsamic vinegar to create a glossy, vibrant and deliciously flavoured side-dish. This cabbage is beautiful paired with roasted red meats, or nut roasts.

- Cook the sliced leeks gently in a large saucepan with the olive oil for 5 minutes.
- Add the balsamic vinegar and maple syrup to the leeks and stir to coat well.
- Add the red cabbage to the saucepan, and stir again to ensure all of the vegetables are coated in the vinegar.
- Cook on the hob, on a low heat, for 60 minutes. When the cabbage is glossy and tender, with a little bite left to it, it is ready to serve.
