Fresh Beetroot Dip with Carrot Nachos
This vibrant, clean-eating beetroot dip is full of flavour and full of raw nutrients. Enjoy this vegan dip with raw carrot nachos, wholemeal pitta bread or vegetable crudités.
HEALTH BENEFITS OF BEETROOT:
Studies have shown that the nitrates present in beetroot help to lower blood pressure and may help to fight heart disease. Nitrates also help to increase blood flow to the brain, which could help to prevent dementia in older people.
- Add all of the ingredients to a food processor and process until smooth. If the dip is too thick you can add a tsp of water at a time to loosen it up.
- Peel the carrots and then thinly slice them on the diagonal. Pile the carrot nachos up and serve with the dip.
