Cherry ‘Ice Cream’ with Chocolate Ice Magic

This clean eating cherry chocolate ice cream is made with frozen bananas and cherries for an antioxidant and nutrient-rich boost. This dairy-free ‘ice cream’ is then topped with a clean eating version of Ice Magic, the popular ice cream topping from the 80’s that set hard on top of ice cream. Commercial brands like Ice Magic are not remotely clean-eating, but this one is made with just a good quality dark chocolate and coconut oil.

  1. Blend together the cherries, bananas and almond milk until smooth.
  2. You can eat this as a soft serve ice cream straight away, or put the mixture into a plastic container and freeze for several hours.
  3. 15 minutes before you intend to eat your ice cream, melt the chocolate and coconut oil together in a microwave for a few seconds, or in a bowl over a pan of hot water. Once the chocolate and oil are combined, mix well then put the bowl in the fridge to cool down.
  4. Serve your ice cream, topped with chocolate sauce and enjoy!
