Chicken & Haricot Bean Casserole
This clean-eating casserole recipe is light and fresh, with haricot beans and green lentils, in a gorgeous lemony chicken broth. Bursting with nutrients and really easy to make, this gluten-free casserole is perfect for a mid-week supper. A good quality, fresh stock is key to the flavour of this dish.
- Season the chicken legs with salt and pepper and fry in ghee over a moderately high flame until both sides are well browned.
- Add the drained beans and lentils to the pan, the juice of the lemon, the herbs and the stock. Bring to the boil and then simmer for 20 minutes.
- When the chicken is cooked (check the thickest part of the leg, there should be no pinkness left), season the broth to taste with salt and pepper.
