Chicken & Haricot Bean Casserole

This clean-eating casserole recipe is light and fresh, with haricot beans and green lentils, in a gorgeous lemony chicken broth. Bursting with nutrients and really easy to make, this gluten-free casserole is perfect for a mid-week supper. A good quality, fresh stock is key to the flavour of this dish.


  1. Season the chicken legs with salt and pepper and fry in ghee over a moderately high flame until both sides are well browned.
  2. Add the drained beans and lentils to the pan, the juice of the lemon, the herbs and the stock. Bring to the boil and then simmer for 20 minutes.
  3. When the chicken is cooked (check the thickest part of the leg, there should be no pinkness left), season the broth to taste with salt and pepper.
