Rhubarb & Coconut Porridge

This clean eating rhubarb and coconut porridge provides a nutritious breakfast that will keep you feeling full thanks to the coconut milk, wholegrain oats and pistachios.

HEALTH BENEFITS OF RHUBARB: Rhubarb stems are an excellent source of b-complex vitamins including folates, riboflavin and niacin. They also provide dietary fibre and antioxidants.


  1. Whisk together the coconut milk and water in a jug.
  2. Pour the coconut milk and water mixture onto your oats either in a small saucepan, or a microwavable bowl.
  3. Heat on the hob, or in a microwave for 2-3 minutes, until the porridge is bubbling and thick.
  4. Stir in your stewed rhubarb and top with a sprinkling of pistachios and raisins.
