Roasted Butter Beans
Roasted butter beans make a really healthy snack as they are high in protein, iron, fibre and B vitamins. These roasted butter beans are very quick to prepare and can provide a filling, on the go snack. They are best eaten immediately, but they will store for several days in an air tight container.
- Preheat the oven to 170 °C.
- Drain the butter beans and pat dry with kitchen towel. Tip the beans into a medium sized bowl and pour in the ghee. Sprinkle the beans with the salt and pepper, stirring gently to coat them without breaking them into pieces.
- Spread the beans in a single layer on a baking tray for 30 minutes or until golden. Allow to cool to room temperature, the beans will crisp up slightly as they cool.
- Eat immediately or store in an air tight container.
