Roasted Butter Beans

Roasted butter beans make a really healthy snack as they are high in protein, iron, fibre and B vitamins. These roasted butter beans are very quick to prepare and can provide a filling, on the go snack. They are best eaten immediately, but they will store for several days in an air tight container.

Method

    1. Preheat the oven to 170 °C.
    2. Drain the butter beans and pat dry with kitchen towel. Tip the beans into a medium sized bowl and pour in the ghee. Sprinkle the beans with the salt and pepper, stirring gently to coat them without breaking them into pieces.
    3. Spread the beans in a single layer on a baking tray for 30 minutes or until golden. Allow to cool to room temperature, the beans will crisp up slightly as they cool.
    4. Eat immediately or store in an air tight container.
