Banana and Strawberry Chia Seed Pudding
This clean-eating recipe for strawberry chia seed pudding feels naughty but really isn’t. Chia seeds are a great source of quality protein, they are also very nutrient dense. Choosing ripe (or overripe) fruit will add enough sweetness to this pudding. If you wanted to make it sweeter, then you could add a small amount of honey.
- Slice the bananas and place in a food processor with the coconut milk and strawberries. Blend on high for 1 minute or until the bananas are fully pureed.
- Add the chia seeds to the mix and pulse gently for 30 seconds to mix.
- Pour the mixture into a bowl and leave to stand for 15 minutes, allowing the chia seeds to expand.
- Spoon into serving bowls and eat immediately. This mixture can be stored overnight in the fridge although the banana mixture will discolour slightly.
