Butter Bean & Tomato Soup
You’ll be surprised at how warming and comforting this simple, clean-eating, tomato soup recipe is. It costs just pennies to make and can be rustled up using frozen onions and store cupboard basics. Tomatoes are nutrient dense; they are a rich source of vitamins A, C and folic acid, as well as antioxidants such as lycopene which is thought to play a role in cancer prevention.
- Gently fry the onions and garlic, in olive oil, on a medium heat, for 5 mins until they turn translucent and are starting to soften.
- Add the herbs, salt, pepper and chicken stock, tomatoes (tinned and fresh) and butter beans to the pan and allow to simmer, partially covered for 15 minutes.
- Allow to cool slightly before blending. If you don’t have a blender, then serve as a rustic, chunky soup.
You can substitute the stock for water or vegetable stock to make the dish vegan friendly.
