Butter Bean & Tomato Soup

You’ll be surprised at how warming and comforting this simple, clean-eating, tomato soup recipe is. It costs just pennies to make and can be rustled up using frozen onions and store cupboard basics. Tomatoes are nutrient dense; they are a rich source of vitamins A, C and folic acid, as well as antioxidants such as lycopene which is thought to play a role in cancer prevention.


  1. Gently fry the onions and garlic, in olive oil, on a medium heat, for 5 mins until they turn translucent and are starting to soften.
  2. Add the herbs, salt, pepper and chicken stock, tomatoes (tinned and fresh) and butter beans to the pan and allow to simmer, partially covered for 15 minutes.
  3. Allow to cool slightly before blending. If you don’t have a blender, then serve as a rustic, chunky soup.

You can substitute the stock for water or vegetable stock to make the dish vegan friendly.
