Green Tea & Lemon Granita
Sometimes simple really is best. This granita has a beautiful green tea flavour with a hint of lemon. This refreshingly icy treat can be enjoyed with a meal or on its own. With the anti-cancer benefits provided by green tea, this can also be enjoyed by cancer patients who are struggling to take in enough fluids.
- Pour the boiling water onto the tea bags in a heatproof jug or bowl. Allow the tea to steep for 10 minutes.
- After 10 minutes, remove the tea bags and pour the tea into a large plastic Tupperware container. The larger the tub, the quicker the granita will freeze. Leave the tea to cool at room temperature for half an hour.
- Put the tub in the freezer for at least 3 hours, stirring with a fork every 15 minutes. This is important as if you don’t stir it and break up the ice crystals, the tea will just freeze into a solid block of ice.
- Serve in chilled glasses with a sprig of mint.
If needs be, this granita can be sweetened with 1/2 to 1 tbsp of honey, added prior to freezing.
