Green Tea & Lemon Granita

Sometimes simple really is best. This granita has a beautiful green tea flavour with a hint of lemon. This refreshingly icy treat can be enjoyed with a meal or on its own. With the anti-cancer benefits provided by green tea, this can also be enjoyed by cancer patients who are struggling to take in enough fluids.

  1. Pour the boiling water onto the tea bags in a heatproof jug or bowl. Allow the tea to steep for 10 minutes.
  2. After 10 minutes, remove the tea bags and pour the tea into a large plastic Tupperware container. The larger the tub, the quicker the granita will freeze. Leave the tea to cool at room temperature for half an hour.
  3. Put the tub in the freezer for at least 3 hours, stirring with a fork every 15 minutes. This is important as if you don’t stir it and break up the ice crystals, the tea will just freeze into a solid block of ice.
  4. Serve in chilled glasses with a sprig of mint.

If needs be, this granita can be sweetened with 1/2 to 1 tbsp of honey, added prior to freezing.
