Roasted Pistachio ‘Ice Cream’
This clean eating pistachio ‘ice cream’ is made using lusciously smooth frozen bananas studded with gorgeous crunchy roast pistachio’s. Unlike commercial ice creams, this ice cream is 100% good for you and contains no added sugar!
Bananas are highly nutritious, they are an excellent source of micronutrients such as B vitamins, vitamin C and manganese; bananas also provide complex carbohydrates for a sustained source of energy. Pistachios are a source of healthy unsaturated fats, potassium and vitamin K.
- Peel and slice the bananas, freeze for at least 4 hours.
- Add the pistachios to a food processor and process until well broken down, but not a fine powder.
- Add the frozen bananas the processor and blend until smooth. You may need to scrape down the sides of your food processor several times before the bananas are broken down properly.
- Serve immediately, topped with crushed pistachios and a drizzle of maple syrup.
