Crispy Sweet Potato Fries
Sweet potato fries are much more nutritious than their white counterparts containing more vitamin A, fiber and potassium. When roasted as chips, sweet potato becomes both crispy and deliciously chewy. These chips go particularly well with our crispy chicken nuggets and lemon mayo!
- Peel and cut the sweet potatoes into 1/2 inch thick chips.
- Put the raw chips in a large bowl and add 3 tbsp of olive oil. Coat the chips well with the oil and then season with ¼ tsp of pepper, 1 tsp salt and 1 tsp garlic powder.
- Spread the chips on a heavy baking tray and bake in the oven for 30-40 minutes or until crispy and just starting to brown at the edges.
- Serve with homemade mayo and enjoy!
